I don't think it's the touch screen that they're showing off, more like the software behind it.

Probably both; I mean the programs themselves are pretty cool, But there are 2 users interacting with that thing at the same time, that means it's running in excess of 4 simultaneous interactions at one time (And probably more at certain points), which is pretty damn impressive.
